EGG SALAD

Ingredients:
• 7 large boiled eggs
• 1 1/2 tbsp chopped red onion
• 1/4 cup mayonnaise
• 2 tsp fresh lemon juice
• 1/2 cup chopped celery
• 1/4 tsp salt
• 1/4 tsp ground black pepper
• 4 small leaves butter lettuce

Instructions:
1. Dice the eggs and onion.
2. Combine eggs and onion with the mayonnaise, lemon juice, celery, salt,
and pepper in a bowl.
3. Serve on top of lettuce either alone or in a sandwich by rolling it up in
the lettuce leaves.
