15 MAINTENANCE AND ADHERENCE Low-carb Timeline General ‣ It's important to know about some of the possible pitfalls associated with low-carb eating; that way you can take steps to prevent them, you will know what to do if you encounter difficulties, and you will understand the importance of giving your body some time to adjust to the diet. ‣ Your body is used to using easily digestible and available carbohydrate for energy. With this new eating plan, your body will transition to using fat for fuel. ‣ Remember: When insulin is up, you are storing fat, and when insulin is low, you can mobilize fat. The longer you have been insulin-resistant (obese or type 2 diabetic), the longer it may take to turn the fat-burning switch on. ‣ The carbs you eat will have lots of fiber. This will reduce insulin levels through the day and night, and insulin sensitivity will improve. Fiber also helps to create a healthier "microbiome" (the intestinal bacterial environment).
